Marbled Strawberry Cheesecake Red Velvet

Pure red velvet dough — brown butter, buttermilk, vinegar, natural cocoa — with all the strawberry folded into a pink cheesecake ribbon that runs through it like lava through rock. Everything inside the cookie.

House rule: amounts always stay in kitchen fractions, even scaled. Round eggs to the nearest whole in practice.

Method

    Make the lava

    Beat 3 oz cream cheese, 2 Tbsp powdered sugar, 2 Tbsp strawberry powder, 1 tsp cornstarch, and the vanilla into a thick, stiff pink paste; fold in the crushed strawberries last if using. Keep cool — refrigerate if the kitchen is warm.

    Brown the butter

    Set aside a quarter of the butter, brown the rest about 3 minutes until deep golden and nutty, then stir in the reserved cold butter; cool to just warm.

    Beat in cream cheese and sugars

    Add 4 oz cream cheese, 1 1/4 cups brown sugar, and 1/4 cup granulated sugar to the warm butter. Beat until completely smooth, 1–2 minutes.

    Add the wet ingredients

    Beat in the egg, yolk, vanilla, 1 tsp vinegar, and gel color until glossy and evenly red.

    Add the dry ingredients

    Add 2 1/2 cups flour, 1 Tbsp cornstarch, 3 Tbsp cocoa, 3 Tbsp buttermilk powder, the baking soda, baking powder, and salt; mix on low just until no dry streaks remain.

    Fold in white chocolate

    Fold in 3/4 cup white chocolate.

    Fold in the lava (3–4 strokes only)

    Dollop the pink lava over the dough and fold ONLY 3–4 big strokes — thick pink ribbons against red, not a blended dough.

    Chill the dough

    Cover and refrigerate 1–2 hours until firm (up to 48 hours — color and flavor deepen).

    Scoop and bake

    Scoop 2-Tbsp balls straight down through the ribbons, 2 inches apart. Bake at 350°F for 11–13 minutes, until the edges are set but the centers still look soft.

    Cool

    Rest on the pan 5 minutes — the lava pockets are hot — then cool on a rack; they set creamy as they cool.

Notes

All the strawberry now lives in the marbling: the swirl carries the fruit and the tang while the dough stays pure red velvet. Because the dough no longer gets the strawberry powder's reddish assist, the gel coloring matters more — or skip it and embrace a deep burgundy. The strawberry powder doubles as the swirl's thickener. Natural cocoa only; the vinegar-buttermilk reaction needs its acidity. Don't overbake — it dulls the red. Store refrigerated up to 5 days (serve at room temperature); dough freezes 2–3 months.
